Coregonus lavaretus is called commonly called Whitefish or Lavaret. It originally comes from Lake Geneva, although today it also lives in the alpine lakes of Europe, Asia and North America. Its coat is greyish or bluish white. It’s rich in vitamins A and B, phosphorous and protein. Its firm flesh is fine and delicate.
