Know your product

Pollachius pollachius is commonly called Pollack. It reaches one meter long on average. It lives around rocks, mainly in the Atlantic Ocean, the English Channel, the North Sea, the Baltic, and the Mediterranean Sea. Its back is brown-green in color, its sides and stomach are lighter and yellow-spotted.
Pollack is rich in protein, minerals, vitamins A and B. Its firm and delicate flesh releases subtle flavors, similar to Cod, although finer in taste.

Choose Pollacks with a tight skin, shiny scales, and which release a pleasant sea smell.
