The scientific name of Anchovies is Engraulis. They are small fishes divided into many different species. People started eating them a long time ago, at least in Europe since the Middle Ages. Recently, their fishing has been restricted and so it has now become a rare fish.
Our Anchovies are marinated in brine, oil and salt; they are flavored with garlic, in Provençal or Oriental style. The flesh is firm and releases quite strong and delicious flavors.
