Queen Scallops are a group of more than 3,000 edible, bivalves mollusks from the Pectinidae genus. Queen Scallops live on the shallow floors of the Atlantic Ocean and the Mediterranean Sea. They move very quickly by ejecting water when closing their shells suddenly. They hide within an invaluable heart that has a delicious, tender and delicate taste, and which is very popular as a delicacy in many countries. This heart is actually the only muscle of the mollusk, causing the opening and closing of the Scallop’s shells. Also inside the Scallop shell is a coral that is the sexual gland of the animal, which is edible and also appreciated.

How to buy

Choosing good Queen Scallops is very important. They must still be living: their shell has to be well closed, or the Scallop should refold when you touch it.

Keep Queen Scallops in the fridge for a few days.

Tips

We advise you not to cook your Queen Scallops too much, or they will become rubbery. You can remove them from the heat when their flesh is opaque, and when the center remains slightly transparent. Cook for 1 or 2 mins each side.
