Clupea harengus is commonly called Herring. It lives near the banks of the cold and deep waters of the Northern hemisphere: Atlantic Ocean, Baltic Sea, Northern Sea, Pacific Ocean, even in the estuary of the British Thames. Ancient Egyptians and Greeks already practiced Herring salting. This fish was so highly valued that it was used as a currency at a certain period during the Middle Ages. For instance, during the Hundred Years' War between the Kingdom of England and the Kingdom of France, certain ransoms were paid with Herrings. The fish has a fat flesh rich in protein, vitamins A and B, and minerals. It’s a fine and delicious fish.
