Know your product

Yuzu is a citrus fruit that comes from Southeast Asia; it’s a hybrid of mandarin and a variety of lemon called Citrus Inchangensis. Close to grapefruit in character, although a little smaller, it carries a similar aroma. Its acid taste also recalls the taste of mandarin and lime. Its zest is very popular as a condiment in Japan. A Dutch beer flavored with yuzu was even marketed for a few years.

How to buy

You have to choose very yellow yuzus — the color is the sign of their ripeness. The fruit has a naturally irregular shape, so you needn’t look necessarily for yuzus with a symmetric shape.

You can cover yuzus and keep them in the fridge for several weeks.

Tips

You can replace yuzu in any recipe with mandarin. You can also serve it in an exotic fruit salad.
