Quince

Know your product

Quince comes originally from Iran and only grows in very warm countries. The fruit is yellow when ripe. It can only be eaten cooked because of its strong acidic character. Rich in flavor and in pectin, it is used like a vegetable or as an ingredient in Eastern Europe in soups.

How to buy

Choose big firm, pulpy and yellow quinces and avoid totally green, hard fruit. Good quinces must be a little green in color.

how to keep

You can wrap your quinces in a plastic bag and keep them in the fridge for up to 2 months.

Tips

You can roast quinces in the oven, or add it to a poultry or lamb tagine.
