Ham is the whole leg of pork, salted, dried and sometimes smoked, cooked, braised or even boiled. For many years, Ham was considered a royal dish, and was, for instance, on the tables of emperors in Ancient Rome.
Parma Ham comes from pigs that are fed with Parma milk. The Ham itself has a long maturation that lasts between 1–3 years. It doesn’t involve any preservatives or additives, has full traceability, and develops unique and traditional flavors. The preparation is highly regulated: the pigs are specifically fed, then their legs are covered with sea salt by master curers, followed by a very specific refining process.
